Perfect chicken cutlets start with patience and technique. Let the breading rest for at least 15 minutes before frying—this helps it stick beautifully and ensures that golden, crispy crust we all love. And don’t rush the fry! A proper shallow fry keeps the cook even and the cutlets tender inside.
Proper shallow frying technique and tips :
1. Prep the Pan
• Choose a heavy-bottomed skillet or pan that distributes heat evenly. Cast iron or stainless steel works best.
• Add enough oil to cover the bottom of the pan about ¼ to ½ inch deep. Use neutral oils with a high smoke point like canola, vegetable, or peanut oil.
2. Heat the Oil
• Heat the oil over medium heat until it reaches about 350–375°F. If you don’t have a thermometer, test it by dropping in a small piece of breading—it should sizzle immediately but not burn.
3. Ensure Even Breading
• After breading the cutlets, let them rest for at least 15 minutes. This allows the coating to adhere properly, preventing it from sliding off during frying.
4. Fry in Batches
• Fry only 2–3 cutlets at a time, depending on the size of your pan. Overcrowding drops the oil temperature and leads to soggy cutlets.
5. Monitor Cooking
• Cook the cutlets for 3–4 minutes per side, flipping carefully with tongs or a spatula to avoid disrupting the crust. The edges should turn golden before you flip.
• Adjust the heat as needed to maintain steady sizzling—too low, and the cutlets absorb oil; too high, and the breading burns before the chicken cooks through.
6. Drain Properly
• Once golden brown, transfer the cutlets to a wire rack set over a baking sheet (not directly onto paper towels—they can trap steam and make the crust soggy).
7. Check for Doneness
• Ensure the internal temperature reaches 165°F using a meat thermometer for perfectly cooked, juicy chicken.

• For extra crispiness, double-dip the cutlets in flour/egg/breadcrumbs.
• Sprinkle with salt immediately after frying for enhanced flavor.
