When you’re a new Cook, you spend a lot of time working in different kitchens and buying different cookbooks to learn as many recipes as possible. Now that I’ve now learned, created and mastered so many, I want to share them all with you. It is my hope that you make them your own change them, fuck it even make them better and then tell me what you did. I’ve forgotten more recipes then I could count, so trust me when I tell you, I’ll be glad to relearn them.

CHICKEN CUTLETS
Perfect chicken cutlets start with patience and technique. Let the breading rest for at least 15 minutes before frying—this helps it stick beautifully and ensures that golden, crispy crust we all love. And don’t rush the fry! A proper shallow fry keeps the cook even and the cutlets tender inside.
PICKLE JUICE RANCH
Use this tangy, herbaceous dressing as a dip for veggies, drizzled over salads, or as the ultimate sauce for fried chicken, burgers, or pizza.
THE PERFECT STEAK
Ribeye is the king of steaks and I never cook them on the grill. Here is why!. Because of the heavy fat content, there’s always gonna be flareups which could kill the flavor. My preferred method is in a heavy bottom cast-iron pan and I only do a quick butter base at the end. I see too many chefs hammering ribeyes in butter. It’s just not necessary.
